I am a big fan of making food in bulk and then freezing it for a later time. Whether it be sauces, dressings, cinnamon rolls, or nuggets, I like the warm cozy feeling that comes with knowing I have a freezer full of commonly used ingredients or prepared food for when I need it. One of the potential downfalls of freezing is putting everything in one container and then when you only need some, you have this massive block of frozen sauce or a bunch of cinnamon rolls frozen together. That's why when it comes to freezing sauces or ingredients you typically need in smaller amounts I use ice cube trays. FYI each ice cube equivalent amount is 2 tablespoons ;)
When it comes to freezing prepared foods such as cinnamon rolls, chicken nuggets, burger patties, etc I am a BIG fan of flash freezing. This allows you to prep a lot of food at once and then you can pull it out individually later as needed. One extra step saves you from having to partially thaw and separate your freezer food and it's great for quick meals!
Like I say about anything else, homemade is always best. So when I am making burgers for dinner, or chicken nuggets, or even pounding out thin cutlets, I pull out several pounds extra. I am already dragging out everything and making a mess, so I might as well make extra so I can save myself the mess and time later!
