We certainly eat veggies fresh, but I am an avid canner and preserver, so I plant a surplus and in some cases, multiple rounds of quicker growing veggies to maximize yield. I am stocking up on canning jars, and beginning to plan what I am going to can this year. This year has been a banger year for the garden, I often look at it in awe at how fruitful and healthy it is. I tried several new (to me) veggies, and none have disappointed! Here's what's growin'...
Although beans and broccolini, as well as the occasional broccoli side shoot is the only thing we are currently harvesting there are plenty of vegetables popping and beginning to bear fruit. Potatoes plants are beginning to die back and I will be able to harvest them in a couple of weeks. Some of the cherry tomatoes are beginning to ripen as well while peppers are taking form and the corn has tassels and ears forming. Within just a few short weeks I will be canning like a lunatic and be up to my ears in produce. And if you ask me, that is a great problem to have! What are you currently harvesting?
